Normally in Germany this is normally eaten as an side dish but we love to eat this as a hearty breakfast at the weekends.
BAUERN FRÜHSTÜCK
INGREDIENTS
- 4-6 medium cooked potatoes (any kind which are suitable for sautè potatoes)
- 200g cubed smoked/unsmoked bacon
- 1 small onion, finely chopped
- 3-4 large eggs, beaten well
- 1tbsp olive oil
- salt and pepper to taste
PREPARATION
Fry the bacon and onion gently until the onion has softened and the bacon has started to release the fat.
Pour off some of the excess oil and add the potatoes, turn up the heat and fry until the potatoes have started to become golden and crispy.
Add the egg and stir until all the egg has set.
Serve immediately.
