Raclette – Traditionally Swiss, yummy… Monthly Mingle #1

I thought I would have a little treat and make myself some raclette. Monthly Mingle #1 is being hosted by Meeta over at What’s For Lunch Honey? and I wanted to make a dish worthy of submitting. Thanks for hosting this event Meeta, what a great idea!

This time the theme Football’s Coming Home, in reference to the upcoming World Cup.

Since the country of my birth (Scotland), is no longer present in the competition I wanted to make a dish in honour of my adopted country Switzerland.

Fishcakes

Every day I try and visit each of my favourite foodblogs, yesterday Celia over at English Patis posted the most wonderful recipe for fishcakes.

I’m not a huge fish lover but I do like cod and so I thought I’d give Celia’s recipe a try. I have adapted the original recipe slightly by using low fat mayonnaise and bärlauch (wild garlic) since it’s in season at the moment.

Jamie Oliver’s – Spaghetti Tetrazzini

I really admire Jamie Oliver, he’s a great chef and his contribution in revolutionising the diet of school children all over the UK cannot be understated.

Jamie’s latest cookbook ‘Jamie’s Italy‘ reflects his journey through Italy which he undertook to rekindle his passion for cookery. He certainly achieved his goal, reading through this book you experience the different regions of Italy and their very different use of ingredients.

Here is the recipe for Spaghetti Tetrazzini from Jamie’s Italy:

Meatballs in a Tomato Sauce

When Natalie & Gareth came to visit us for the first time a couple of years ago they wanted to cook for us one night, they made the most amazing meatballs I’d ever tasted. I’m sure Natalie said it was based upon an Antonio Carluccio recipe she picked up in the supermarket.

My Parent’s In-Law’s arrive tonight for a short break and I thought meatballs would be the perfect warming dish since the weather is so wet and dismal at the moment.

Here is my version of the recipe Natalie & Gareth cooked for us.
