Since our visitors went home this morning I decided I wanted something for dinner which was quick and easy so thought I would make some chicken fried rice.

CHICKEN FRIED RICE
INGREDIENTS
- 1 Boneless chicken breast, finely sliced
- 1 Medium onion, finely diced
- 1 Red romero pepper, finely diced
- 1 Cup mushrooms, sliced
- 1 Yellow chilli, finely diced
- 2 Cups cooked long grain rice, cold
- 1 Clove garlic, finely diced
- 2 Eggs
- 2 Tbsp Oyster sauce
- 4 Tbsp Light soy sauce
- 1 Tbsp Plant oil/Vegetable oil
- Chopped spring onions to garnish
PREPARATION
- Heat the oil in a wok until it begins to smoke. Add the chicken and veg, stirring continuously (the chicken should cook very quickly since it is very finely sliced).
- Add the rice and continue to stir fry for 1-2 minutes.
- Make a well in the center of the rice and add the eggs, let them start to cook and then stir into the rice.
- Add the soy and oyster sauce and stir fry for 30 seconds.
- Sprinkle over the spring onions and serve immediately.
