Chicken Fried Rice

Since our visitors went home this morning I decided I wanted something for dinner which was quick and easy so thought I would make some chicken fried rice.

CHICKEN FRIED RICE

INGREDIENTS

  • 1 Boneless chicken breast, finely sliced
  • 1 Medium onion, finely diced
  • 1 Red romero pepper, finely diced
  • 1 Cup mushrooms, sliced
  • 1 Yellow chilli, finely diced
  • 2 Cups cooked long grain rice, cold
  • 1 Clove garlic, finely diced
  • 2 Eggs
  • 2 Tbsp Oyster sauce
  • 4 Tbsp Light soy sauce
  • 1 Tbsp Plant oil/Vegetable oil
  • Chopped spring onions to garnish

PREPARATION

  1. Heat the oil in a wok until it begins to smoke. Add the chicken and veg, stirring continuously (the chicken should cook very quickly since it is very finely sliced).
  2. Add the rice and continue to stir fry for 1-2 minutes.
  3. Make a well in the center of the rice and add the eggs, let them start to cook and then stir into the rice.
  4. Add the soy and oyster sauce and stir fry for 30 seconds.
  5. Sprinkle over the spring onions and serve immediately.
