Chicken Quesadillas

To use the guacamole I made today and the fresh corn tortillas I bought yesterday I decided to make some quesadillas. I wasn’t following a recipe, just making it up as I went along, since it turned out really tasty I decided to post it.

  2. Fry the chicken, fajita seasoning and onion until cooked through
  3. Spread one of the tortillas with a heaped tablespoon of guacamole and sprinkle with some grated cheese
  4. Spoon a quarter of the chicken mixture onto the tortilla
  5. Spoon over some salsa and sprinkle over a little more cheese
  6. Place in the oven and repeat the process until all of the quesadillas are filled
