To use the guacamole I made today and the fresh corn tortillas I bought yesterday I decided to make some quesadillas. I wasn’t following a recipe, just making it up as I went along, since it turned out really tasty I decided to post it.
CHICKEN QUESADILLAS
INGREDIENTS
- Eight 4″ Corn Tortillas
- 2 Chicken breasts, very finely sliced
- 100g grated cheese
- 1 quantity guacamole (see previous recipe)
- 1 jar smooth salsa
- 1 small red onion, finely sliced
- 1 tbsp fajita seasoning (optional)
TO SERVE
- Sour cream
PREPARATION
- Preheat the oven to 200°C
- Fry the chicken, fajita seasoning and onion until cooked through
- Spread one of the tortillas with a heaped tablespoon of guacamole and sprinkle with some grated cheese
- Spoon a quarter of the chicken mixture onto the tortilla
- Spoon over some salsa and sprinkle over a little more cheese
- Place in the oven and repeat the process until all of the quesadillas are filled
- Allow the quesadillas to become golden and crisp
- Serve with sour cream
