I came across the most amazing blog today, it is Appon’s Thai Food. When browsing through Appon’s recipes I found her recipe for Pad Thai. I didn’t have all the ingredients so here is my adaptation
GLASS NOODLES PAD THAI
INGREDIENTS
Serves 2
- 1 Small Pack of Glass Noodle
- 1 Egg
- 2 boneless chicken breasts sliced, very finely
- 2 Small Red Onion, finely sliced
- 50g Soya Bean Shoots(pre-cleaned)
- 1/2 Tbsp Sugar
- 2 Tbsp Light Soy Sauce
- 1 Tbsp Oyster Sauce
- 2 Tbsp Chilli Sauce
- 1 Tsp Dry Flaked Chilli
- 3 Tbsp Oil
TO SERVE
- Peanuts (pounded to fine pieces)
- Lime wedge
- Fresh corriander leaves
PREPARATION
- Soak the glass noodles in water for 5 minutes to soften them.
- Put the oil in a hot frying pan and sauté chicken until almost cooked.
- Move it to one side of the frying pan to make room to fry the egg.
- Break the egg in hot oil and stir quickly for a few seconds to break it up.
- Add the glass noodle and other cooking ingredients and stir-fry for 1 minute.
- Serve immediately with the garnishes
I think without the tofu it is really missing something so next time I will definately add some.

It’s not the tofu, you really need the garnishes, the dish is just a base for the flavours of the garnishes:
Typically a spoonful of sugar, flaked chilli and two or three spoons of crushed peanuts.

Point taken, the peanuts and chilli flakes I would definately agree with but I think for my own taste any more sugar would make it too sweet, but this is just a personal thing.

At the Thai restaurant near my office (which, of course, is American version Thai food), the Pad Thai is sweet. But if you like it the way you made it, that’s what counts! Thanks for posting a recipe that looks like something I can make. I’m new to Thai food–some of it I really like, like Pad Thai.
