Guacamole

On the way back from the Messe yesterday we stopped at the little Mexican shop in Riehen and picked up a few sauces and some fresh corn tortillas, I decided to make some guacamole today to accompany the tortillas.

GUACAMOLE

INGREDIENTS

  • 1 ripe avocado
  • 1/2 small red onion, finely chopped
  • 1 tbsp finely chopped corriander
  • 1 medium tomato, deseeded and finely chopped (I don’t bother to remove the skin)
  • 1-2 small red, chillies finely chopped (I like it hot so I leave the seeds in)
  • 1 tbsp lime juice (or to taste)
  • 1 small clove garlic, finely chopped
  • pinch of salt

PREPARATION

  1. Mash the avocado in a bowl with a fork.
  2. Add the finely chopped onion, tomato, garlic, chilli, corriander and a pinch of salt. Mix thoroughly.
  3. Add 1/2 the lime juice and taste, if required add the rest of the lime juice and taste again. If required add more lime juice to taste.

This is delicious with tortilla chips, quesadillas or as a dip for regular chips/crisps.

This recipe is very flexible, if you don’t like garlic then leave it out, if you don’t like things too hot then reduce or remove the chilli. A recipe is a guide not meant to be written in stone.

    This looks great. As a matter of fact I bought 2 avocados yesterday. I wanted to make a salad with one and the other …. well it’ll have to be this!
