Braised Fajita Turkey Burgers with Fiesta Corn Salsa

Here’s a rather tasty little number from The Great Big Burger Book by Jane Murphy & Liz Yeh Singh.

BRAISED FAJITA TURKEY BURGERS WITH A FIESTA CORN SALSA

Makes 3 burgers or 6 servings

INGREDIENTS

FOR THE BURGERS

  • 450g Ground turkey (I used garlic marinaded turkey breast which I minced by hand)
  • Salt and coursely bround black pepper
  • 1 Tsp Olive oil
  • 60ml Tomato puree
  • 120ml Chicken stock
  • 6 Flour tortillas

FOR THE SALSA

  • 350g Sweetcorn kernals
  • 1 Small red onion, finely chopped
  • 1 Fresh JalapeƱo chile, seeded and finely chopped (I used sliced jalapeƱos from a jar)
  • 250g Cherry Tomatoes, quartered
  • 1 Large bunch of corriander, finely chopped
  • 1 Tbsp Capers, drained and chopped (I don’t really like capers so I left them out)
  • 1 Tbsp Olive oil
  • 1/4 Tsp salt
    1. Combine all of the salsa ingredients into a bowl, season and mix well.
    1. Form the turkey into 3 x 1″ patties seasoned with the salt and pepper.
    2. Brown the patties in a frying pan with olive oil.
    3. Once the patties are browned, add the stock and the tomato puree to the pan and cover tightly with a lid, lower the heat and continue to braise gently for 15 minutes or until cooked through.burger in sauce
    4. Heat the tortillas until pliable in a microwave (covered and heated for about 60 seconds, turned after 30 seconds), slice the burgers like fajitas and place half a burger on each tortilla.
    5. Top with some of the pan sauce and the salsa
    6. Enjoy!
