Summer Salad

The weather had been decidedly summery all week (not that I’ve seen much of it stuck in bed) so I thought I would make a nice big salad for dinner tonight with all my favourite ingredients. My flu is getting a little better every day so I hope the good weather will continue so I can enjoy a couple of days of sunshine before I’m off to Belgium on Wednesday.

SUMMER SALAD

INGREDIENTS

  • Baby mozzarella balls torn
  • Cherry tomatoes quartered
  • 1 Small tin of sweetcorn
  • 1 Small red onion, thinly sliced
  • 1 Green romano pepper, thinly sliced
  • Shredded iceberg lettuce
  • 1 Turkey breast steak (garlic marinated)
  • 1 Tbsp Balsamic Vinegar
  • 1 Tbsp Olive oil
  • Sea salt and freshly milled black pepper

PREPARATION

  1. Heat a grill pan until smoking hot, grill the turkey breast steak until completely cooked through (should take about 10 minutes). Set aside to allow juices to settle.
  2. Add the lettuce, onion, cheese, sweetcorn and peppers to a large mixing bowl.
  3. Slice the turkey thinly and add to the bowl containing the other ingredients.
  4. Add the balsamic vinegar and the olive oil to a bowl and wisk so that they are combined well.
  5. Add the dressing to the salad and mix thoroughly, season to taste.
  6. Serve immediately.
