The weather had been decidedly summery all week (not that I’ve seen much of it stuck in bed) so I thought I would make a nice big salad for dinner tonight with all my favourite ingredients. My flu is getting a little better every day so I hope the good weather will continue so I can enjoy a couple of days of sunshine before I’m off to Belgium on Wednesday.

SUMMER SALAD
INGREDIENTS
- Baby mozzarella balls torn
- Cherry tomatoes quartered
- 1 Small tin of sweetcorn
- 1 Small red onion, thinly sliced
- 1 Green romano pepper, thinly sliced
- Shredded iceberg lettuce
- 1 Turkey breast steak (garlic marinated)
- 1 Tbsp Balsamic Vinegar
- 1 Tbsp Olive oil
- Sea salt and freshly milled black pepper
PREPARATION
- Heat a grill pan until smoking hot, grill the turkey breast steak until completely cooked through (should take about 10 minutes). Set aside to allow juices to settle.
- Add the lettuce, onion, cheese, sweetcorn and peppers to a large mixing bowl.
- Slice the turkey thinly and add to the bowl containing the other ingredients.
- Add the balsamic vinegar and the olive oil to a bowl and wisk so that they are combined well.
- Add the dressing to the salad and mix thoroughly, season to taste.
- Serve immediately.

This looks fairly easy to do, Pamela. Maybe my husband (hehe) should try this recipe someday, being the salad expert. I just love sweet corn!
