Boiled Turkey In A Spicy Sauce

I was reading Appon’s Thai Food recipes today and Appon presented a fabulous dish of Boiled Chicken In A Spicy Sauce (Guy Op Sea Eaiw). I thought Appon’s recipe was fantastic and decided I would cook this for dinner tonight. I’m afraid I had to adapt it slightly only because I didn’t have all of the ingredients in the fridge. I also toned down the number of chillies, I love chillies but 3 was my maximum.

Boiled Turkey in a Spicy Sauce

BOILED TURKEY IN A SPICY SAUCE

Serves 1

INGREDIENTS

  • 200g Garlic marinaded turkey
  • 1 Bunch corriander
  • 2 Garlic cloves
  • 1/2 Tsp Black peppercorns
  • 3 Tbsp Light soy sauce
  • 500ml Reduced fat chicken stock
  • Handful of mange tout
  • 1 Small pack Udon noodles

PREPARATION

  1. Add the garlic, peppercorns, corriander and soy sauce to a small food processor and blitz until well combined.
  2. Pour the soy mixture over the turkey and allow to marinade for at least 30 minutes.
  3. Heat some oil in a pan and seal the turkey on both sides.
  4. Place the turkey and stock into a pan, bring the stock up to the boil then reduce the heat and allow to simmer until the stock has reduced by half.
  5. During the last 5 minutes of cooking I added udon noodles and mange tout to the stock.
  6. Remove the turkey, slice and serve over the mange tout and noodles, ladle over some stock top with some of the following sauce.

For the spicy sauce

INGREDIENTS

  • 3 Chillies
  • 1 Garlic clove
  • 1 Tsp Sugar
  • 1/2 Tsp Salt
  • 2 Tbsp Dark soy sauce

PREPARATION

  1. Add all of the sauce ingredients into a small food processor and blitz until well combined.
  2. Serve over the turkey.
