It’s another gorgeous summers day, temperature is aready rising and I wanted a hearty breakfast to see me through until dinner time. There were quite a few bits and pieces in the fridge which needed to be used so I thought an omelette was definately the way to go. Here is what I came up with…

BUMPER BREAKFAST OMELETTE
Serves 1-2
INGREDIENTS
- 3 Large eggs
- 1 Spring onion, sliced
- 1 Large tomato, chopped
- 1 Handful of chestnut mushrooms, sliced
- 1 Cup cheddar cheese, grated
- 2 Slices turkey bacon, chopped
- Salt and pepper
- Olive oil
PREPARATION
- Fry the mushrooms until beginning to soften and then add the turkey bacon and fry for a further minute.
- Beat the eggs lightly, add the grated cheese to the beaten eggs and season with salt and pepper.
- Add the spring onions and tomatoes to th frying pan and mix well, pour over the egg mixture and mix thoroughy.
- Cover the pan and reduce the heat, allow the omelette to cook gently for about 10 minutes. If required finish cooking the top of the omelette under a hot grill.

This looks splendid. what are chestnut mushrooms like? This is the first i’ve heard of them.

Chestnut mushrooms are like regular white button mushrooms but they are brown and have a slightly nutty flavour.
