After being truly inspired by all of the great ideas you gave me for dinner I finally decided upon what to have for dinner tonight.
I love salad, turkey and tortillas so so these seemed the perfect basics for a light dinner on this hot and sticky summer evening.

GRILLED TURKEY WRAP
Serves 1
INGREDIENTS
- 100g Turkey breast
- Avacado slices
- Mixed salad leaves
- Sliced cheddar cheese
- Sliced spring onion
- Sliced tomato
- Chilli sauce
- Tomato salsa tortilla wraps
PREPARATION
- Preheat a grill pan and grill the turkey until cooked through, allow to stand for a couple of minutes and slice.
- Soften the tortilla in the microwave for a couple of seconds until pliable
- Layer all the ingredients onto the wrap and top with a drizzle of the chilli sauce, roll up the wrap and serve.

It was Stewart’s idea to include avacado, the creamy avacado slices balanced the heat from the chilli sauce perfectly!

Scrummy! There you go… it just shows what a creative chef you are. Don’t tell my Fiance, he’s been asking me for a tortilla for quite some time now! I keep forgetting, which you’ve just reminded me. Thanks!

I’m taking notes, since it will be very hot soon, in my neck of woods, and I won’t want to do any cooking.
Thanks for this recipe!
