Sticking with the Middle Eastern influence I decided to turn the wild boar steaks into koftas. I thought I’d serve them with some Couscous and some natural yogurt flavoured with fresh corriander and chives.

WILD BOAR KOFTAS
Serves 1-2
INGREDIENTS
For the Koftas
- 200g Wild boar fillets
- 1/4 Tsp Garlic powder
- 1/4 Tsp Onion powder
- 1/4 Tsp Mild Paprika
- 1/4 Tsp Ground Corriander
- 1/4 Tsp Ground Cumin
- 1 Tbsp Fresh corriander, chopped
- 1/3 Fresh red chilli
- 2 Tbsp Chives, chopped
- Lemon slices
- 4 Garlic cloves
- Olive oil
- Salt and pepper
- 2 Metal Skewers
For the Sauce
- 1 Carton low fat natural yogurt
- 1 Tbsp Fresh corriander, chopped
- 2 Tbsp Chives, chopped
PREPARATION
- Add the boar, herbs and spices to a food processor and pulse until minced and well mixed.
- Wrap the each garlic clove in a lemon slice and thread one onto each skewar.
- Form the meat into two sausage shapes and thread onto metal skewers, finish each skewar with another lemon rapped garlic clove.
- Add the chives and corriander to the yogurt, mix well and refridgerate.
- Grill the Koftas under a hot grill for 8-10 minutes, turning once.
- Serve with a generous spoonful of the yogurt sauce, lemon wedges and couscous.

That looks amazing! I’ve had wild boar bacon, but not acutal meat. I would definatly try that.

Wild boar… a little tough at times. Mincing it should definitely make it more tender. I love the taste of this rustic meat.

I had never eaten it before, quite a ‘gamey’ strong flavoured meat, because it is so lean it has the potential to dry out when cooking so it is really crucial to keep an eye on it when grilling to make sure that this doesn’t happen.
I quite liked it but Stewart wasn’t so keen.

Well, that’s a different way of using wild boar! It looks super fine!
Since I love game’s strong flavour, I guess that it would be to my taste!
