Tomorrow is the big day and we’ve still a bit of prep work needed before they arrive so no complicated breakfasts today. Stewart managed to get the spare room pretty much cleared yesterday but we still need to get rid of a lot of crap. This simple breakfast went down really well.

TOMATO AND CREAM CHEESE CROISSANT
INGREDIENTS
- 1 Plum tomato, sliced
- Garlic and herb cream cheese
- Croissant
- Balsamic vinegar
- Salt and pepper
PREPARATION
- Slice open the croissant and toast until golden brown.
- Spread the cream cheese over both sides of the toasted croissant.
- Arrange the tomato slices over the cream cheese and drissle over a couple of drops of balsaic vinegar.
- Season the tomato with salt and pepper and serve.

Absolutely delish! Think I’ll be using the idea for my men soon!
Have fun next week, Pam and I look forward to chatting about it when they have left to see how it was. And of course, planning our little surprise too!
