Huervos Rancheros - Ranch Style Eggs

I thought since I have been really good over the past few days (I have been working out on my excercise bike for at least 30 minutes each day) that I would have a treat this morning so after my workout I decided to make some of the leftovers in the fridge to good use and make my own version of Huervos Rancheros or Ranch Style Eggs.

HUERVOS RANCHEROS

INGREDIENTS

  • 2 Medium Eggs
  • 1 Soft Flour tortillas
  • 1 Spring onion, sliced
  • 1/2 Red Pepper, chopped
  • 1/2 Green Pepper, chopped
  • 30g Chorizo sausage, sliced
  • 1 Tsp Olive oil
  • Salt and pepper

PREPARATION

  1. Heat the olive oil in a non-stick frying pan. Add the peppers and chorizo and fry gently until the peppers have begun to soften and the chorizo is starting to crispen.
  2. Add the spring onion and continue to fry for a further minute.
  3. Beat the eggs lightly and season with salt and pepper.
  4. Add the eggs to the pan with the veg and chorizo and mix well. Remove from the heat and continue to stir until the eggs have just set.
  5. Warm the flour tortilla in the microwave for 10 seconds (or in the oven/under the grill until just softened).
  6. Serve the egg mixture on top of the tortilla, roll up and serve immediately.
