I thought since I have been really good over the past few days (I have been working out on my excercise bike for at least 30 minutes each day) that I would have a treat this morning so after my workout I decided to make some of the leftovers in the fridge to good use and make my own version of Huervos Rancheros or Ranch Style Eggs.
HUERVOS RANCHEROS
INGREDIENTS
- 2 Medium Eggs
- 1 Soft Flour tortillas
- 1 Spring onion, sliced
- 1/2 Red Pepper, chopped
- 1/2 Green Pepper, chopped
- 30g Chorizo sausage, sliced
- 1 Tsp Olive oil
- Salt and pepper
PREPARATION
- Heat the olive oil in a non-stick frying pan. Add the peppers and chorizo and fry gently until the peppers have begun to soften and the chorizo is starting to crispen.
- Add the spring onion and continue to fry for a further minute.
- Beat the eggs lightly and season with salt and pepper.
- Add the eggs to the pan with the veg and chorizo and mix well. Remove from the heat and continue to stir until the eggs have just set.
- Warm the flour tortilla in the microwave for 10 seconds (or in the oven/under the grill until just softened).
- Serve the egg mixture on top of the tortilla, roll up and serve immediately.

I love to whip up things like this to use up bits and pieces left in the fridge which might otherwise end up getting chucked in the bin.

Riana - I agree completely! I can’t think of any better accompaniments. Unfortunately this was already a test for my diet, I couldn’t afford any more calories.

I have a v.large standing fan which is strategically placed straight in front of my exercise bike, works a treat!
