I ♥ Peanut Butter

I really love peanut butter. I don’t think you can beat toast with peanut butter for a quick and tasty breakfast.

I got up nice and early this morning and decided that I fancied something a little different for breakfast but still using my beloved peanut butter.

I searched the internet for peanut butter recipes and found this great little website from the US Peanut Advisory Board dedicated to those like myself who have a love for peanut butter.

The site has lots of nice facts about the history of peanut butter, how it’s made and most importantly recipes!

I decided I would give their recipe for peanut butter pancakes a try, here’s the recipe.

PEANUT BUTTER PANCAKES

Serves 2-4

INGREDIENTS

  • 1¼ Cups Plain flour, sieved
  • 2 Tbsp Sugar
  • 2½ Tsp Baking powder
  • ½ Tsp Salt
  • 1¼ Cups Semi skimmed milk
  • 1 Egg
  • ¼ Cup Peanut butter (I used crunchy)
  • 3 Tbsp butter, melted I used olive oil

PREPARATION

  1. Add the milk, egg, olive oil, peanut butter into a bowl and whisk vigourously until well combined.
  2. Combine the flour, salt, sugar, baking powder and add slowly to the wet ingredients whisking as you go to prevent lumps continue until all the flour has been incorporated and you have a smooth batter.
  3. Heat a non-stick griddle pan and oil the surface.
  4. Pour ½ ladles of the batter on to the griddle, cooking until golden brown.
  5. Drizzel with honey and serve immediately!

    I have a real addiction for anything featuring peanut butter unfortunately my husband dosen’t share this love, guess that means more pancakes for me!

  4. Oohhhhh, if only I had peanut butter. You don’t have a recipe to make your own peanut butter by any chance? So I don’t have to wait a few months until my family brings me some. (The only one I can find here is outrageous expensive.)

  6. FYI, Do not mix the batter until smooth. Lumps are good and they will cook out. Just ask Alton Brown. He did a show on pancakes!

  9. Oooh, sounds yummy. I have yet to put peanut butter into my pancake batter, I prefer to put it on top so I can taste it more. I make them really healthy with cottage cheese but you’d never know it! I call them:

    Banana Pancakes
