Quick Turkey Chilli

This is such a simple recipe it’s a real winner. I always have either chicken or turkey in the fridge and there are always peppers, onions and garlic in the fridge and the other bits and pieces can always be found in my store cupboard.

Quick Turkey Chilli

QUICK TURKEY CHILLI

INGREDIENTS

  • 2 Slices Turkey breast fillet (about 300g), diced
  • 1 Can Chopped tomatoes
  • 3 Fresh ripe plum tomatoes, chopped
  • 1 Can Mixed beans (pinto and kidney beans)
  • 1 Red pepper, chopped
  • 1 Green pepper, chopped
  • 1 Large onion, chopped
  • 2 Large Cloves garlic, finely chopped
  • 1 Tbsp Tomato puree
  • 1/2 Tsp Ground cumin
  • 1 Tsp Cumin seeds
  • 1 Tsp Chilli powder
  • 1/2 Tsp Onion powder
  • 1/2 Tsp Celery salt
  • 500ml Chicken stock, reduced fat
  • Bunch of Fresh corriander, chopped
  • 1 Bay leaf

PREPARATION

  1. Heat the olive oil in a large pan and add the onion, red pepper, green pepper and garlic, saute gently until everything is softened.
  2. Add the chopped fresh tomatoes and the turkey, stir well and continue to saute for a couple of minutes.
  3. Add the stock, tinned tomatoes, tomato puree, the bay leaf, all the spices and the beans. Bring to the boil, then reduce to a simmer.
  4. Allow to simmer gently until the meat is cooked and the sauce has thickened.
  5. Add the fresh corriander at the last minute.

Serve the chilli over a baked potato or with boiled rice.
