I had the day off work today and the weather was much cooler today, ahh relief at last!!!
I was searching for a nice healthy recipe to inspire me for lunch today, I found a weight watchers recipe which inspired recipe.
SPICY CHICKPEA DIP
INGREDIENTS
- 1 Tin of Chickpeas (265g)
- 1 Red Chilli
- Juice of 1/2 Lemon
- 2 Shallots
- 1 Small Red onion
- 1 Small Bunch parsley
- 1 Small Bunch Coriander
- 3 Tbsp Water
- Salt and Pepper
PREPARATION
- Place all of the ingredients into a food processor and blitz until smooth, adding water so that the chickpea mixture does not become too thick.
- Adjust the seasonings and lemon juice to taste, reserve 2/3 of the chickpea dip to make the stuffing for the peppers.
PEPPERS STUFFED WITH SPICY CHICKPEAS
INGREDIENTS
- 2/3 of the Spicy Chickpea dip made above
- 2 Peppers
PREPARATION
- Preheat the oven to 200°C.
- Half the peppers and remove the seeds but leave the stocks intact.
- Fill the cavity of the peppers with the chickpea mixture.
- Place the peppers into the oven and bake for 10-15 minutes or until the peppers are soft.
- Serve immediately.

Amazing recipe..an old time favorite… I have a bad experience though after having eaten about 4 plates of the same..hehehe, it was irresistible…

That sounds really good! The last chickpea dip I made was with sundried tomatoes and it was really good too!
