Breakfast Tortilla – Vegetarian Week Day 7

Well I’ve made it, my final day of vegetarian week and I must admit I’ve really enjoyed it!! I may make this a regular occurance.

I was in the mood for eggs for breakfast, there was some veg leftover in the fridge which needed used up or would have to go so I thought I would combine them to make a tortilla for breakfast.

BREAKFAST TORTILLA

INGREDIENTS

  • 2 Large eggs
  • 1/2 Large onion, chopped
  • 1/4 Green pepper, sliced
  • 2 New potatoes, very thinly sliced
  • oil

PREPARATION

  1. Fry the potatoes until tender.
  2. Add the green pepper and the onion and continue to cook until soft.
  3. Beat the eggs and pour over the veg.
  4. Continue to cook for a few minutes and then flip and continue to cook until the omlette is set.
