Well I’ve made it, my final day of vegetarian week and I must admit I’ve really enjoyed it!! I may make this a regular occurance.
I was in the mood for eggs for breakfast, there was some veg leftover in the fridge which needed used up or would have to go so I thought I would combine them to make a tortilla for breakfast.
BREAKFAST TORTILLA
INGREDIENTS
- 2 Large eggs
- 1/2 Large onion, chopped
- 1/4 Green pepper, sliced
- 2 New potatoes, very thinly sliced
- oil
PREPARATION
- Fry the potatoes until tender.
- Add the green pepper and the onion and continue to cook until soft.
- Beat the eggs and pour over the veg.
- Continue to cook for a few minutes and then flip and continue to cook until the omlette is set.

after having been a vege for 13 years and going over to the meat side about 3 years ago, for some reason on June 1st i decided i was going to do meat-free June
that lasted all of ONE day!

That looks very tasty. Do the potatoes go crisp? Is it best to have crip slices or not.
The potatoes don’t really go crisp, I think it’s better that way but that is personal preference.
vege days are so great to have, i try to do a few meals per week…lunches/dinners that focus more on beans/legumes rather than meat. it does help with more of a ‘clean feeling’ so to speak. which probably sounds quite weird lol
I know what you mean! You don’t feel like you’re filling your body with toxins. I get that feelin’ too.
That looks great. I love all kinds of omlette, with veggies in it, I am sure it would make a great breakfast.
