Bachelor’s-Prize Chicken

This recipe is another from a cookbook which has sat dormant on my bookcase for a couple of years and has been completely overlooked. Healthy Cooking For Two (or just for you) by Frances Price does have some rather unusual recipes but as I flicked through it this afternoon I came across a recipe which I though had some potential even though it had a bit of a strange title.

The name Bachelor’s-Prize apparently stems from the fact that “apparently” most singletons have peanut butter and natural yogurt in their fridge and that this recipe is so simple that “noncooking bachlors” are assured of success. Those are not my words or sentiments I hasten to add but those of the author.

Since I love just about anything featuring peanut butter I decided to proceed, adding a slight twist of my own.

BACHELOR’S-PRIZE CHICKEN

INGREDIENTS

  • 2 Skinless chicken breasts (The recipe originally called for chicken with the bone-in but I used boneless and the cooking times below and temperature reflects this)
  • 1/2 Cup low fat natural yogurt
  • 2 Tbsp Peanut butter (I used crunchy)
  • Ground red pepper (I wasn’t sure if this meant paprika or chilli powder but I used 1/8 Tsp chilli powder)
  • My additions were also 1/8 Tsp Garlic powder and 1/8 Tsp onion powder

PREPARATION

  1. Pre-heat the oven to 200°C.
  2. Place the peanut butter, yogurt and spices into a bowl and mix well.
  3. Dip the chicken into the peanut sauce, ensuring an even coating.
  4. Place the chicken onto an ovenproof dish and bake in the middle of the oven for 25-35 minutes or until the juices run clear .
  5. Serve hot or cold.

I served the chicken with a couscous and vegetable salad.

I think if I do make this again I’ll add more peanut butter and allow the chicken to marinade.  I also think it would be better if the meat was slashed before marinading to allow better flavour penetration.
