One of my favourite dishes to make with minced beef is of course burgers!! I was really happy yesterday when Stewart reached for my copy of The Great Big Burger Book when I asked him to pick something for me to make with the minced beef I had in the fridge.
The Great Big Burger Book by Jane Murphy & Liz Yeh Singh is an essential for any burger lover or BBQ fanatic and I’ve featured recipes from it here in the past (See Guacamole burgers with Spicy Chili Con Queso & Braised Fajita Turkey Burgers with Fiesta Corn Salsa).
Stewart decided he wanted to give the Guinness Pub Burgers a try, I read through the ingredients and everything seemed pretty straight forward so without further ado..

GUINNESS PUB BURGERS
(Makes 4 Quarterpounder burgers )
INGREDIENTS
- 1lb Good quality minced beef
- 1/4 Cup Guinness draught beer
- 2 Tsp Dry mustard (I used English mustard for a nice kick)
- 1/4 Tsp Ground ginger
- 2 Cloves garlic, finely chopped
- 1 Tsp salt (I used 1/2 tsp as I’m watching my salt intake)
- 1/2 Tsp Ground black pepper
- 2 Tbsp Butter
- 1/4 Cup Spring onions, finely chopped
PREPARATION
- Add all of the ingredients into a large bowl and mix thoroughly with your hands.
- Divide the mixture into 4 equal portions and form into patties.
- Grill the burgers on each side until they reach the desired level of doneness (about 3 minutes each side).
I broke from the recipe slightly as they didn’t add the spring onions to the burger mix but chose to cook them seperately and top the finished burger with the wilted onions. I thought it would add better flavour to mix them through. I also add the butter into the mix to help the burgers retain their moisture since I planned to grill them on my George Foreman contact grill.
This was really sucessful! The burgers did retain their moisture and stayed very juicy. My only problem was that they were really moreish and I could have quite happily eaten another

Man, that is one beautiful lookin’ burger patty! I’m not sure about the guiness, but for something this tasty-looking I’d be up for giving it a try!

I must admit Ellie I wasn’t sure about the Guinness either but I couldn’t taste it in the end burger.

That’s a great looking burger! I’m kind of a burger snob and that one is great. I don’t like just any old burger, it needs to be thick and juicy and usually cooked on the grill. Yours fits the bill perfectly!

I know exactly what you mean Glenna, I’m a complete burger snob and am continually on the lookout for that perfect burger. The book I cited in the recipe is really fab and I just love testing out the various offerings within.
I was really delighted with these burgers they worked ou t beautifully and didn’t fall apart which surprised me since they didn’t really have a binding agent such as an egg.
