Baked Cod Wrapped In Parma Ham

I was talking to Natalie on the phone last night and she mentioned a fantastic Jamie Oliver recipe for roasted monkfish. I’m not a fan of monkfish so I opted to try it using cod as a substitute.

I served new potatoes crushed with a little olive oil and spring onions as the accompaniment but it would the dish would work well with rocket leaves dressed with balsamic vinegar and olive oil.

Salmon Yakitori

Whilst browsing through the UKTV Food site I would this recipe from Ching He-Huang.

Whenever we are back in Glasgow we always visit Ichiban,  chicken yakitori is a firm favourite so I thought this was definately worth trying to see how they compared.

This recipe originally featured on Ching’s Kitchen and was first aired on UKTV Food.

I served my Salmon with spring onion crushed potatoes and carrots, not exactly Asian but tasty never the less.

This marinade/glaze works just as well on poultry as on fish (as I said above it was chicken yakitori I had tried in the past).

An alternative accompaniment would be some spring onion and coriander jasmin rice, the creaminess of the coconut milk in the rice would compliment the sweetness of the glaze beautifully.

I can say that this will feature on the menu in our house again, it was really scrummy and measured up to Ichiban standards favourably!

The Nursery Is Complete!!!

I’m soooo delighted!!! We finished the nursery this afternoon!!

Stewart spent a long afternoon building the final piece of furniture and then it was my turn to vacuum, put all of the babys clothes into his wardrobe and add the finishing touches to the decorations..

We’re happy with how things have turned out and the room really does look like a nursery now! We’re planning on spending what remains of our Sunday night with our feet up watching a couple of episodes of Arrested Development.

With the majority of preparations complete for the babys arrival we should be able to start taking things easy over the next few weekends.

George Foreman G5 Grill

I really LOVE our new George Foreman grill!!

A couple of years ago Stewart bought me a Jr Foreman grill and it we used it relentlessly until the non-stick coating wore off so a couple of weeks ago we ordered a new Foreman Grill. This time instead of a Jr grill we ordered a G5 and it’s wonderful! This one has removable hot plates for easy cleaning and also a variety of assorted plates for grilling, making waffles and also griddling. What more could you possibly want from a grill?

Tonight on I found this delicious sounding marinade recipe on Passionate About Food and thought it would be another great test for the George Foreman.

Blackened Salmon With Low Fat Potato Salad

Since starting my new food program I have been really hankering after a nice piece of fish. Now anyone who knows me will testify to the fact that I have never been a great fish lover but in recent times I have been trying to re-educate myself into eating and enjoying more fish. Like anyone I still have the fear of finding a dreaded bone in the last mouthful but I have tried to ensure that this doesn’t disuade me. With this in mind I have been trying to eat salmon a little more regularly. I do really like salmon teriyaki and have posted a recipe for this great dish in the past and this evening I decided to expand my repatoir of fish cookery and test out another new recipe.

I had a bit of a search on the internet today for a good blackened salmon recipe and found that many of the recipes were quite similar so I decided to merge a handful of these recipes and add my own touch.

I served it with my healthy low fat potato salad (recipe below) and oven roasted vegetables.
