Couscous Stuffed Roasted Peppers

Sorry for the absence dear readers but as you can tell from my last post all those weeks ago we’ve been really busy here since Matthew arrived!

Stewart my darling husband has been taking care of mealtimes as I take care of Matthew’s bedtime routine.

I’ve been breaking myself in gently back into the way of cooking and so last weekend I made a huge pot of chilli. The weather today was really hot and we decided to go for a picnic so when we got home we weren’t in the mood for anything too heavy and so after trawling through the cupboards I came up with this quick and healthy snack.

COUSCOUS STUFFED ROASTED PEPPERS

COUSCOUS STUFFED ROASTED PEPPERS

INGREDIENTS

  • 1 Large Yellow Bell Pepper
  • 125g Easy Cook Couscous (I used roasted garlic and olive oil couscous)
  • 100g Chestnut mushrooms
  • 1 Medium Onion
  • 1 Clove garlic
  • Olive Oil

PREPARATION

  1. Slice the mushrooms, onion and garlic, add to a pan with a generous amount of olive oil and allow to soften gently over a medium heat.
  2. Add 250ml of water to the pan containing the mushrooms and onions and bring to the boil.
  3. Add the couscous, reduce the heat to a simmer and stir continuously for 1 minute.
  4. Remove from the heat and allow to stand covered for 4 minutes.
  5. Fluff up the couscous with a fork and drizzle through a little more olive oil.
  6. Cut the pepper in half and stuff each half generously with the couscous mixture.
  7. Bake the peppers in a pre-heated oven at 200°C for 25 minutes.
  8. Serve and enjoy!
