It’s wonderful to be back in the world of blogging!! My first recipe is a nice and simple affair.
This recipe was featured on BBC2′s show Something For The Weekend by Simon Rimmer and was first broadcast on Sunday 8th June.
FIERY FILLED PEPPERS (Serves 4)
- 2 Tbsp Vegetable oil
- 700g Rump steak (I used minced beef)
- 2 Red Onions, finely chopped
- 4 Garlic cloves, finely chopped
- 50g Tomato puree
- 3 Small chillies, finely chopped
- 2 x 400g Cans chopped plum tomatoes
- 1 Tsp Ground corriander
- Pinch ground cumin
- Pinch ground cinnamon
- 1 Bay leaf
- 450g Canned black beans
- Salt and freshly ground pepper
- 30g High quality 70% dark chocolate
- 4 Large green peppers
- 175g Cheddar cheese
- Rice to accompany
PREPARATION
- Preheat the oven to 180°C.
- Heat the oil in a large frying pan.
- Brown the meat in batches.
- Add the onion and garlic to the same pan and soften gently.
- Add the tomato puree and fry for 6 minutes.
- Add the chillies and cook for 1 minute.
- Add the tomatoes and spices, return the meat to the pan and continue to cook for 5-6 minutes.
- Add the beans and continue to cook for a further 15 minutes.
- Season to taste and add the chocolate.
- Cut the tops off the peppers and remove the seeds.
- Level off the bottom of the peppers so the will sit upright on a baking tray.
- Place the peppers into boiling water and simmer for 3 minutes. Remove with a slotted spoon and place straight into a bowl of iced water to prevent further cooking then drain.
- Sprinkle half of the cheddar into the bottoms of the peppers.
- Spoon the beef mixture into the peppers and top with the remaining cheese.
- Place onto a baking tray and bake for 15 minutes.
- Remove from the oven and serve with boiled rice
