Warm Red Onion and Potato Salad

This is a really side dish which I came across a few weeks ago and we’ve had it as quite a few times since.  It’s really great with grilled chicken or anything off the barbeque.  The recipe appeared in a show called Food Poker and the chef was Lawrence Keogh.

WARM RED ONION AND POTATO SALAD (Serves 1)

INGREDIENTS

  • 1 Large potato, peeled and cubed
  • 2 Tbsp Olive oil
  • 1 Red onion, sliced
  • 1 Tbsp Red wine vinegar
  • 1 Garlic clove, finely sliced

PREPARATION

  1. Boil the potatoes in salted water for 5 minutes until partially cooked.  Drain thoroughly and dry on kitchen paper.
  2. Heat the olive oil in a frying pan, add the potatoes and fry for 4-5 minutes or until they are golden brown.  Remove from the pan and set aside keeping warm.
  3. Add the onion to the frying pan and fry until softened, add the garlic and red wine vinegar and continue to cook for a further 3 minutes over a medium heat.
  4. Remove the frying pan from the heat and return the potatoes to the pan with the onions, garlic and vinegar.  Stir well.
  5. Serve immediately!

The addition of the red wine vinegar adds a wonderful zing to this dish and complements the flavours beautifully.  I would really recommend giving this one a try for your next BBQ!
