This is a really side dish which I came across a few weeks ago and we’ve had it as quite a few times since. It’s really great with grilled chicken or anything off the barbeque. The recipe appeared in a show called Food Poker and the chef was Lawrence Keogh.
WARM RED ONION AND POTATO SALAD (Serves 1)
INGREDIENTS
- 1 Large potato, peeled and cubed
- 2 Tbsp Olive oil
- 1 Red onion, sliced
- 1 Tbsp Red wine vinegar
- 1 Garlic clove, finely sliced
PREPARATION
- Boil the potatoes in salted water for 5 minutes until partially cooked. Drain thoroughly and dry on kitchen paper.
- Heat the olive oil in a frying pan, add the potatoes and fry for 4-5 minutes or until they are golden brown. Remove from the pan and set aside keeping warm.
- Add the onion to the frying pan and fry until softened, add the garlic and red wine vinegar and continue to cook for a further 3 minutes over a medium heat.
- Remove the frying pan from the heat and return the potatoes to the pan with the onions, garlic and vinegar. Stir well.
- Serve immediately!
The addition of the red wine vinegar adds a wonderful zing to this dish and complements the flavours beautifully. I would really recommend giving this one a try for your next BBQ!
