It’s grill season and so it’s time for me to dust off my favourite summer cookbook – The Great Big Burger Book!
For anyone who loves BBQ’s this is an essential piece of kit.
This recipe is based upon one from the Great Big Burger Book but it’s not exactly the same so I give you my version:

TEX-MEX CHEDDAR CHICKEN BURGES WITH CARAMELIZED ONIONS (makes 3 large burgers)
For the burgers:
- 500g Chicken breast
- 1 Tsp Chilli powder
- 1 Tsp Ground cumin
- 1 Small red onion
- 1 Small bunch fresh corriander
- 2 Canned chipotle chiles in adobo sauce
- 1 Cup grated cheddar cheese to top the burger
- Burger buns/flour tortillas to serve
For the caramelized onions:
- 2 Tbsp Olive oil
- 2 Large onions, finely sliced
- 1/4 Tsp salt
- 1/4 Tsp pepper
- 1/4 Cup beef stock
- 1/2 Cup barbecue sauce
- 2 Tsp Balsamic vinegar
PREPARATION
Burgers:
- Add all the ingredients for the burgers into a food processor and pulse until everything is finely chopped and well mixed.
- Form the ingredients into 3 patties.
- Lightly oil a grill pan over a medium heat and cook the burgers for about 5-6 minutes each side.
Caramelized onions:
- Heat the olive ol in a frying pan over a medium heat.
- Add the onions and seasoning and cook until the onions are browned, about 10 minutes.
- Add the stock, barbecue sauce and vinegar. Reduce the heat to low and simmer until the sauce thickens, about 15 minutes.
Serve the burgers in warmed flour tortillas, top with the onions and cheese.
