Mexican Style Chicken with Coriander and Lime

It has been quite some time since my last post here and in that time we’ve become parents once again. I’m now the proud mother of a 4 year old boy and a 6 month old girl and we couldn’t be happier.

I’m currently still off on maternity leave for another 4 weeks so I really will try and keep blogging as once I’m back at work time may be at a premium.

So, on to the food…

I ADORE Mexican food and am constantly searching for new recipes. This one was dreamt up this afternoon just basically based on my favorite flavors which I associate with Mexico. I used my slow cooker but it could be cooked just as easily on the stove-top.

Two Bean Vegetarian Chilli

It’s Friday at last!!! What a long week it’s been, I think the sudden change from high summer and 30°C to Autumn and 15°C has made it seem even longer. My body has spun straight into hibernation mode and all I want to do is eat comfort food and sleep.

Still determined to eat less meat in order to feel better and to help me loose weight I decided to make a nice pot of chilli for dinner tonight and instead of meat I thought I would make it a vegetarian chilli. No meat doesn’t necessarily mean no flavour.

Gareth’s Exceptional Enchiladas!

My best friend Natalie and I can sit talking on the phone for hours talking about food. Natalie is a great cook and so is her boyfriend Gareth. Last year when we were back in Glasgow Natalie and Gareth invited us over for dinner, Gareth said he would cook enchiladas. Natalie had told me that Gareth made exceptional enchiladas so I was really looking forward to trying them. Natalie was absolutely right, they were amazing!!

I hope Gareth thinks I did his recipe justice, I singed the ends of the tortillas slightly but they were still really good!

Guacamole Burgers With Spicy Chili Con Queso – Monthly Mingle #3 & WCC #6

It’s that time again – Monthly Mingle #3!! This month Meeta has chosen “Beat The Heat” as the theme.

I spent quite some time scratching my head over this one and then I thought to what is the best way of beating the heat in the kitchen in the summer?? A Barbeque!! With that in mind I turned to my copy of The Great Big Burger Book by Jane Murphy and Liz Yeh Singh in search of a fingerlickin burger recipe and I think I have found one!!

This month’s theme for the Weekend Cookbook Challenge #6 (WCC) is Lucky 7′s and since this great recipe had 7 ingredients I thought it would be perfect to submit!

Turkey Chipotle Enchiladas

I was reading through my new copy of Two Cooks and a Suitcase by Doug Bell and Rhona Robertson trying to decide which recipe to try out first but discovered that many of the recipes involve using dried chiles which I cannot find easily here in Switzerland. If I lived in Glasgow finding these ingredients wouldn’t be a problem since I could go to Lupe Pinto’s deli, therefore I chose a rather simple recipe to begin with. The various salsa and other sauce recipes say that they can be converted into cooking sauces by the addition of chicken stock. This is my adaptation of their chipotle sauce recipe, I added turkey and used it as a filling for enchiladas.
