Karen’s Speedy Courgette & Bacon Risotto

This recipe comes from the New Covent Garden Soup Company’s  - Soup & Beyond book.  I can really recommend the Covent Garden cookbooks as I have a couple and so far all the recipes I’ve tried have always been delicious.  They saved my bacon on Christmas Day when I had a soup disaster and found I had all the ingredients for the Lentil and Bacon soup in the cupboard!!

Anyway, back to the risotto.  We were shopping at a local farm last weekend, at this time of year the local produce is amazing and they had some really great looking green and yellow courgettes so we bought a load and then weren’t sure what to make with them.  Mid week Stewart was looking through the cookbooks trying to find inspiration and the Covent Garden book fell open at this page and he decided to test it out. It was simply divine!  Really tasty!  Matthew loved it too as he had a little bit for lunch the next day!

Sweet Cherry Tomato and Sausage Bake

For my birthday this year I got three new cookbooks, Nigella Express by Nigella Lawson, Rick Stein’s Mediterranean Escapes and Jamie Oliver’s new book Jamie At Home. As anyone who has frequented this site will know I’m a very big fan of Jamie O and it was merely a matter of time before I featured a recipe from Jamie At Home.

This recipe is definitely one I wish I had last summer as we had a glut of tomatoes grown on the balcony and this would have been perfect.

Sausage and Lentil Casserole

I’m on the hunt for dishes which are easy to prepare, will fit in with my eating plan and will reheat in a microwave (for lunch the next day). We recently sampled some Bauern Bratwurst which we bought in Germany, they’re really good. Very meaty and with a hint of smokiness which I thought would be perfectly suited to a casserole. With that in mind my next step was to decide what would complement these sausages … what could be better or more traditional than lentils..

As usual this recipe was one of those which evolved as I went along, I was really quite delighted with the results!

One Pot Pork And Black Bean Stew

I can’t resist a bargain at the supermarket and this is the reason that my freezer usually ends up looking like a 3D jigsaw puzzle.

It’s just as well for me that my hubby is an expert at Tetris!

A couple of weeks ago the supermarket had a special offer on boneless pork steaks, I adore pork but Stewart doesn’t like it so I don’t usually cook it very often.

I decided to take advantage of the special offer and buy a pack of pork and stashed it away in the freezer until I was inspired to come up with a new creation.

Well today was that very day! My cravings seem to consist of absolutely anything sweet at the moment and I as I said in a comment yesterday I could eat my own body weight in haribo and chocolate, I hoped that buy adding sweetcorn and carrots to this Mexican influenced stew that it would be a healthy way to beat those unhealthy cravings for something sweet.

Linguine Alla Carbonara Di Salsiccia - Sausage Carbonara

I’ve been in bed with flu for the past few days, it crept up on me gradually whilst I was in Glasgow. It didn’t spoil my weekend and I still made it to the Take That concert on Sunday night but by Monday I was lying on the sofa at my aunt’s house feeling really ill and rather sorry for myself. Somehow I managed to catch 2 flights home on Tuesday, it really is a haze.

I’m still feeling pretty ropey but wanted something filling and comforting for lunch today so I turned once again to my trusty copy of Jamie’s Italy by Jamie Oliver. I posted the Spaghetti Tetrazzini recipe from this book a couple of weeks ago and it was a real hit, I’m sure this recipe will be one too.

Stay tuned for a surprise event taking place here next week!

I’d never tried this recipe before but it sounded pretty straight forward and ticked all the right boxes so I thought it was worth trying.
