General Tso’s Chicken

This is the first recipe we tried from Ching-He Huang’s new book Chinese Food Made Easy.

Apparently General Tso’s Chicken is a very popular dish in the USA, this is a fiery dish with deep flavours.  I really enjoyed it and it was very quick to prepare and make.  Proper fast food!

Special Egg Fried Rice

Yesterday my newest cookbook arrived and I’ve really been looking forward to getting my hands on it.  It is a copy of the new book from Ching-He Huang – Chinese Food Made Easy.  Thumbing through the pages last night I couldn’t wait for today to arrive so that I could make a trip to our local asian supermarket to stock up on ingredients to allow me to test drive some of Ching’s recipes.

When I got home I was ravenous and decided to whip up a quick treat and that took the guise of some Chinese style Special Egg Fried Rice using the contents of the fridge.

Mexican Style Chicken with Coriander and Lime

It has been quite some time since my last post here and in that time we’ve become parents once again. I’m now the proud mother of a 4 year old boy and a 6 month old girl and we couldn’t be happier.

I’m currently still off on maternity leave for another 4 weeks so I really will try and keep blogging as once I’m back at work time may be at a premium.

So, on to the food…

I ADORE Mexican food and am constantly searching for new recipes. This one was dreamt up this afternoon just basically based on my favorite flavors which I associate with Mexico. I used my slow cooker but it could be cooked just as easily on the stove-top.

Hope you like it.

Tex-Mex Cheddar Chicken Burgers with Caramelized Onions

It’s grill season and so it’s time for me to dust off my favourite summer cookbook – The Great Big Burger Book!

For anyone who loves BBQ’s this is an essential piece of kit.

This recipe is based upon one from the Great Big Burger Book but it’s not exactly the same so I give you my version:

My Idea Of A Traditional Christmas Dinner

Let me first begin by wishing everyone a belated Merry Christmas!!! I hope you all had a wonderful time over the festive period. Ours was special this year since it was our son’s very first Christmas. My uncle joined us from Scotland for the holidays so it was truly a family event.

Christmas wouldn’t be Christmas in our house without roast turkey and the trimmings, so that is exactly what we had. This is how the main course looked but I’ve included the recipe for the soup and the main course below.

Coq Au Riesling

Last night I was watching the new series from Nigella Lawson called Nigella Express. As you would expect from the title it’s about cooking great tasting food with minimal effort and time. The episode I watched showed Nigella’s take on an Alsacian classic, “Coq Au Riesling”. Living in here in Basel on the doorstep of Alsace good Alsacian wine is not difficult to come by so I decided I’d put Nigella’s claims to the test.  So here it is..

The Perfect Roast Chicken!

Simple roast chicken, one of life’s most sublime dishes if done well. I LOVE roast chicken and searched for a long time before I found a recipe which I think provides the pefect roast bird, juicy with crispy skin!!

This cooking instructions for this roaster are from Delia Smith who is in my opinion the Queen of British cookery, you either love her or hate her and I’m a big fan. Her recipes work, plain and simple…

Ad Hoc Turkey Lasagne

What to do with a huge tray of turkey escalopes??? That was the question facing me today. I’ve been trying to use up all of the meat we had in the freezer and so over the past week or so we’ve been eating quite a lot of red meat and it’s much more than I’m used to so I really want to steer clear for a few days. There was a special offer on at the supermarket and since I can’t resist a bargain I bought a tray of turkey, my only problem was that there was 1.5kg of the stuff..

As I walked/waddled/hobbled around the supermarket last night I tried to figure out at least one dish I could use the turkey for… and then thanks to seeing some smoked bacon lardons I had one of those eureka moments.. I would make a lasagne. This would not be a traditional lasagne as Stewart doesn’t care for bechamel sauce. I have decided to try one of those, I’ll make it up as I go along recipes and hope it turns out ok.

Lily Kwok’s Curry

I was watching Great Food Live the other day and Jenni Barnet was interviewing Helen Tse. Helen is third generation British Chinese and has just written a book called Sweet Mandarin which details the story of her family and their journey from China to the UK, it sounded really interesting. Helen has also just opened a Pan Asian restaurant with her sisters in Manchester also under the name Sweet Mandarin.

This curry recipe came from Helen’s grandmother Lily and has apparently become very famous at the restaurant. I’m a real curry devotee so when I saw Helen make this on Great Food Live it was definitely a recipe I wanted to try out.
