Sorry for the absence dear readers but as you can tell from my last post all those weeks ago we’ve been really busy here since Matthew arrived!

Stewart my darling husband has been taking care of mealtimes as I take care of Matthew’s bedtime routine.

I’ve been breaking myself in gently back into the way of cooking and so last weekend I made a huge pot of chilli. The weather today was really hot and we decided to go for a picnic so when we got home we weren’t in the mood for anything too heavy and so after trawling through the cupboards I came up with this quick and healthy snack.

Welcome To The World!!

Matthew James

A brief post to let you all know that our son Matthew James was born on Wednesday 9th May at 21.16.  He weighed in at 3.395kg and was 51cm long and is a little angel!!  Both of us are absolutely fine!

We arrived home yesterday and are now getting to know one another properly.  Things may be on the quiet side here depending on how Matthew gets on now he’s home.

Thank you to all of you who sent lovely messages and emails they were all greatfully received!

Week 38 - Hangin’ In There

I know I have been really guilty of blog neglect lately and I’m very sorry.  Week 38 is here and I’m feeling pretty good although my legs and feet have started to swell and I have really sore hands in the morning.  So much for our little boy arriving early!  I think he’s changed his mind and I wouldn’t be surprised if he ends up coming after his due date of 11th May!

Things are all organized here for the baby arriving and our family support will be arriving soon, my two aunts arrive 4th June for 1 week and then my in-laws arrive 8th July for 10 days.

Two weeks ago the girls threw me a baby shower and it was fantastic! There was lots of tasty snacks, party games and towards the end of the afternoon I put on the Wii and there was a mini tennis tournament.   We has a really good laugh and our little boy got lots of lovely pressie, he’s an extremely lucky little lad already.

Got the docs on Wednesday afternoon so we’ll see what she has to say about my swelling (hopefully my BP is still ok) and whether she thinks baby will arrive soon or be late.  Tonight we’re off to visit two of the girls from the antenatal class who had their babies last week and coincidentally have ended up sharing a room in the hospital, one had a little boy called Connor and the other had the first baby girl we’ve heard of in ages and named her Sophie!

The Perfect Roast Chicken!

Simple roast chicken, one of life’s most sublime dishes if done well. I LOVE roast chicken and searched for a long time before I found a recipe which I think provides the pefect roast bird, juicy with crispy skin!!

Baby Update - Week 35

Just back from the doctors, I’ve been told to have total rest for the next two weeks since the baby’s head is now engaged and I’ve started to efface.  I’ve been off work since last week and I’ve been trying to rest but apparently I’ve not been doing a good enough job.

My doc says she’ll  be happier if baby will stay put for another two weeks but he’s perfectly healthy and is measuring about 2.6kg (5lb 11oz in old money) so if I do go into labour the hospital will not halt it but I too would prefer if he doesn’t come yet.  No baby profile pics today I’m afraid as it wasn’t possible to get a shot of him in profile today since his head is now so far down.

Other than really bad backache I’ve been keeping pretty well.  I get tired really easily these days and have had no motivation to come up with interesting new recipes so I apologize once again for the lack of posts here lately.

I’m really looking forward to next Saturday as it’s my baby shower, the girls are coming round for the afternoon and I’ve been warned that I’m not allowed to lift a finger!

We’re off to our penultimate antenatal class this evening. I’ve really enjoyed the classes all the couples in the class are very nice and hopefully we’ll all be able to keep in touch.

Happy Blogging Birthday To Me!

Yesterday was my little site’s 1st birthday!

I cannot believe that Posie’s Place has been up and running for a whole year!

I would like to take this opportunity to thank everyone who has read and supported this site in it’s fledgling year.  I hope you have enjoyed the range of recipes I’ve posted.

Ad Hoc Turkey Lasagne

What to do with a huge tray of turkey escalopes??? That was the question facing me today. I’ve been trying to use up all of the meat we had in the freezer and so over the past week or so we’ve been eating quite a lot of red meat and it’s much more than I’m used to so I really want to steer clear for a few days. There was a special offer on at the supermarket and since I can’t resist a bargain I bought a tray of turkey, my only problem was that there was 1.5kg of the stuff..

As I walked/waddled/hobbled around the supermarket last night I tried to figure out at least one dish I could use the turkey for… and then thanks to seeing some smoked bacon lardons I had one of those eureka moments.. I would make a lasagne. This would not be a traditional lasagne as Stewart doesn’t care for bechamel sauce. I have decided to try one of those, I’ll make it up as I go along recipes and hope it turns out ok.

Guinness Pub Burgers

One of my favourite dishes to make with minced beef is of course burgers!! I was really happy yesterday when Stewart reached for my copy of The Great Big Burger Book when I asked him to pick something for me to make with the minced beef I had in the fridge.

The Great Big Burger Book by Jane Murphy & Liz Yeh Singh is an essential for any burger lover or BBQ fanatic and I’ve featured recipes from it here in the past (See Guacamole burgers with Spicy Chili Con Queso & Braised Fajita Turkey Burgers with Fiesta Corn Salsa).

Stewart decided he wanted to give the Guinness Pub Burgers a try, I read through the ingredients and everything seemed pretty straight forward so without further ado..

The Best Stew Recipe

This morning I told Stewart that if he picked a recipe from any of my cookbooks which could utilize the pack of beef stewing steak and another which used the minced beef which I had in the fridge then I would happily make one for tonight and the other for tomorrow night’s dinners. After flicking through a couple of books I was presented once again with my copy of Cook With Jamie as Stewart really liked the look and sound of the recipe for The Best Stew With Potato and Rocket Pasta Cushions. I read through the recipe to find that we had almost all the ingredients in the fridge but I since the potato and rocket past cushions are a little too high in carbs to be diabetes friendly, I have decided to just concentrate on making the stew and serve something else as my side dish.
